Modeling wall with air cavities

I am confronted to a problem due to the modeling of a wall with air cavities. This wall is part of a 19th century building. It is made of limestone, mortar and another part of limestone.

The mortar is between the rocks of limestone. But the density (in volume) of this mortar is something like 50%. It means that the mortar takes up only 50% of the volume between the stones. So there is 50% of air.

I want to evaluate the risk of condensation in this wall. So I want to enter configuration of the wall. But I don't know how to proceed in order to take into account the cavities.

I could work on various cases, one considering without cavity ; another one with only a cavity, so an air gap between the stones, or I can put both. for example, limestone/mortar/air gap/mortar/limestone.

What would you advise ?
